Originally from Carnarvon, Stuart started his journey at 44 King St in the heart of Perth. Gaining a wealth of experience from a multitude of areas within the food industry and from top chefs in Perth, Stuart moved on to become the Executive Chef at Barchetta and The Blue Duck before spreading his wings for some adventure in Melbourne where he became the Senior Sous Chef to Brendan McQueen at Matteo’s, a 2 Hat restaurant in North Fitzroy.
Once returning to Perth, Stuart became the Group Executive Chef of the Cocktail Gastronomy Group, overseeing three award winning venues - The Classroom, Lucky Chan’s and The Dutch Trading Co. Each venue has a distinctly different menu and theme, requiring Stu to keep his finger on the pulse with current techniques and trends.
Stuart focusses his time on his two businesses, Showcase Events WA, where he works closely with WA farmers, producers and businesses to specialise in events that are looking to showcase local, seasonal Western Australian produce and Chefs Collective WA, where he works closely with restaurants and venues to create a more inclusive, team-focussed environment that promotes creativity and consistency.
